You will be seeing quite a few more warm, wonderful, Winter dishes over here for the next few months, and since this morning was frrrrreezing, these Coconut Turmeric Oats were perfect!
Coconut Turmeric Oats (GF, V)
Ingredients:
1/2 cup gluten-free rolled oats
1 cup non-dairy milk of choice
2 Tbs shredded coconut
1/2 tsp turmeric
Dash of black pepper (helps to unlock those powerful antioxidants & anti-inflammatory benefits from the turmeric)
1/2 tsp vanilla extract
2 tsp maple syrup
Dash of sea salt
Dash of cinnamon (to taste)
Directions:
Mix all ingredients together in a sauce pan over medium heat, stirring often (about 3 minutes). Once the oats are simmering, reduce heat to low, and continue cooking for another 10-12 minutes.
