Easy Gut-Healthy, Hormone-Happy pho (GF)

Sunday Scaries? Pho-get about it.


I have touched on this a little bit, but for the past few months I have been working on balancing my hormones for my fertility health. I'll be sharing my story in the coming weeks, because over these last few months I have learned more about myself and my body's capability to heal itself, than I ever thought possible. I'm currently going through hormone stimulation to prepare for my second egg retrieval in a few days. And as I continue to learn more, I continue to include foods in my diet that promote hormone health as well as gut health. The two go hand in hand, so I've included foods that benefit both in this nourishing, delicious, "fertilely-fabulous", gut-healthy pho (... sounds appetizing right?). Trust me, it is!


Ingredients:

(Serves 2)


For broth

- 4 cups bone broth (contains collagen, which nourishes the intestinal lining and reduces inflammation)

- 1 Tbs coconut aminos

- 2 Tbs minced ginger

- 1 clove garlic

- 1 tsp coconut sugar

- 1 tsp turmeric

- 2 star anise

- dash of black pepper


Add ins

- 4-6 oz kelp noodles**

- 1/4 cup dried wakame** (I used Emerald Cove)

- 1 large carrot, chopped

- 6 oz mushrooms, or protein of choice


Garnishes

- lime wedges, basil, cilantro, bean sprouts, sriracha, etc.


Directions:

In a large pot, add all broth ingredients and bring to a low simmer. Allow to cook for 10 minutes, stirring occasionally, then add in the other ingredients (except for the kelp noodles), and cook for another 5-10 minutes. Add in kelp noodles after broth has finished cooking, and top with garnishes of choice.

** Sea vegetables contain high levels of iodine, which helps to promote hormone health and optimize thyroid function. However, it's important to remember not to over do it when it comes to iodine, because too much can actually have a negative reverse affect on our thyroid (the average recommendation per day is 150 mcg).
